The TRICK to Making the BEST Chicken Cutlets

In this post I am going to share my trick to making the best chicken cutlets!  My mom has been making these forever and they are always insanely good – I could eat them everyday!  Read the step by step process for this recipe to the see the easy TRICK to making these amazing, fluffy chicken cutlets!

Start by prepping two bowls with eggs and bread crumbs.

Coat all cutlets with egg and then breadcrumbs.

Once all cutlets are coated with breadcrumbs – here is the trick! – coat cutlets once more with egg before putting them into the oil.  Double dipping!

After the cutlet is dipped a second time in the egg put directly into the heated oil.  Cook for a few minutes on each side until chicken is cooked through. I like mine more browned, so I cook until they are a darker color.  If you like chicken cutlets you have to try this recipe.

Ingredients

  • 1 package thin sliced chicken breasts
  • 6 eggs
  • 2 cups breadcrumbs (plain or Italian)
  • Canola oil

Directions

  1. Start by adding canola oil to a frying pan (cover the bottom of the pan) and heating on medium heat, so it is hot enough to fry cutlets after they are prepped.
  2. Crack 6 eggs into a shallow bowl and beat together.
  3. Add breadcrumbs to a separate shallow bowl.
  4. Dip cutlets into egg then breadcrumbs and fully coat.  
  5. Once all cutlets are coated in breadcrumbs dip a second time into egg and then drop directly into heated canola oil.
  6. Cook for a few minutes on each side – flipping so no side burns – until chicken is cooked through completely.
