Campfire Cupcakes

I saw the idea for these campfire cupcakes online and I wanted to give them a try!  I didn’t have some of the things other people were using, so I just used what I already had (I made these last minute).

I decided to use coconut for the fire and pieces of pretzel sticks for the logs.  I used about a cup of coconut and added yellow and red food coloring according to the directions on the box to get an orange color with a mix of red and yellow – I just added the correct number of drops and stirred the coconut.  

Once the cupcakes were baked and cooled I frosted with chocolate frosting (I thought chocolate was better than vanilla for the campfire theme.)  Then I took a small handful of coconut and piled in the middle of the cupcake to look like flames. Then I took the pretzel sticks, broken into pieces, and piled on top of the coconut to look like logs.  

These were super easy to put together – nothing complicated!  They came out really cute and actually looked like little fires!

Ingredients

  • 1 box cupcake mix (vanilla or chocolate)
  • 1 tub chocolate frosting
  • 1 cup sweetened coconut
  • Yellow & red food coloring
  • Pretzel sticks

Directions

  1. Bake cupcakes according to directions and let cool.
  2. Frost cupcakes with chocolate frosting.
  3. Color coconut with food coloring – I used red and yellow to get a mixed orange-yellow-red color.
  4. Pile small amount of coconut in the middle of each cupcake (to look like fire).
  5. Break pretzel sticks into small pieces and put four over the top of the coconut (to look like logs over the fire!)
