Homemade Chicken Soup

When the weather starts to get colder I find myself making this chicken soup almost every single week.  Not only is it really easy to make, but it always tastes amazing! It’s full of vegetables and chicken, so it’s definitely on the healthier side and it even fills me up!  

This recipe makes a really big pot and we eat it all week – for lunch and dinner.  It tastes perfect on its own, but sometimes I like to add a scoop of rice or noodles – so good!  The best thing about this chicken soup is that the veggies are chopped up into tiny pieces and the chicken is shredded – the combo is delicious.

Before I start making the soup I cook the chicken – I like to cook the chicken in a crock pot because it turns out sooo much more tender than boiling (but boiling is quicker, so sometimes that’s the best option!)

Once the chicken is cooked I start the soup by peeling vegetables and cutting into small pieces.  I like making a really big pot, so I use a lot of veggies, but you can definitely just use less if you prefer to make a smaller pot.  I like to use, carrots, celery, parsnips, a turnip and an onion. Once they are peeled and cut into pieces I chop into tiny pieces with a cuisinart food processor.  If you use a food processor/chopper chop/grind into small pieces – but not too small – you definitely want small pieces, not a puree.

In a large pot I add chicken broth, water, chicken bouillon, vegetables, salt, pepper, tomato sauce.  Then I let the soup cook over medium heat while I shred the chicken – I try to get the chicken into pretty small pieces and after cooking in the crock pot it pretty much falls apart!  Once shredded add to the pot!

I usually let everything cook for about 30 mins before serving!

Ingredients

  • 2-3 chicken breasts
  • 1 bag Carrots
  • 5 Celery stalks
  • 3 Parsnips
  • 1 Turnip
  • 1 onion
  • 2 32 oz chicken broth
  • 3 scoops tomato sauce
  • Salt, to taste
  • Pepper, to taste

If your making a bigger pot add:

  • 2 cups water
  • 2 tsp chicken bouillon  
  • Noodles or rice (optional)

Directions

  1. Cook chicken.
  2. Peel and cut vegetables into small pieces.
  3. Use food processor to chop vegetables into tiny pieces.
  4. Add chicken broth, water, chicken bouillon, vegetables, salt, pepper, and tomato sauce to a large pot.
  5. Shred chicken and add to pot.
  6. Cook for about 30 mins.
