Puff Pastry Poptarts
I saw puff pastry poptarts at my local coffee shop and they looked sooo delicious, but damn they were expensive! I couldn’t get them off my mind so I just had to try making them at home! I got everything I needed at the store and surprised my husband with them and he was shocked! I made these poptarts extra big for the WOW factor and I love them this way, but you could make them whatever size you like! Here is what I used!
What I Used
Puff Pastry
So for this recipe I used store bought puff pastry. I used the Jus-Rol puff pastry sheets – these puff up so nicely and taste amazing too!
Jam
I had a large bag of frozen berries in my freezer, so I put these on the stove with some sugar and made a quick jam!
Icing
Just confectioner sugar and water – and then a drop of my homemade jam for color!
Egg wash
One egg and a drop of water.
I start by making the jam – I always have a bag of frozen mixed berries in my freezer so I use that – but you can use any berries you want! You could also skip this step and use a pre-made jam that you like. I use two cups of frozen berries, a half cup of sugar and a little water – about a half cup. I add everything to a small pot and cook on medium-high heat until everything starts melting down and comes to a boil. Then I reduce to a low-medium and let the mixture simmer for about 15-20 minutes. The jam will start to thicken and once it coats the back of a spoon it should be ready. I like to add to a bowl and let it cool before adding to the puff pastry. You can also mash the berries a little if you want a smoother jam.
Then I roll out the puff pastry – I only use one sheet for my recipe and make four LARGE poptarts – you could definitely cut these smaller and get 8 out of these if you choose too! I use a knife and cut straight down the middle from left to right. Then I cut 4 equal sections from the bottom down giving me 8 equal pieces – 4 tops and 4 bottoms.
I add jam to the middle of 4 of the pieces – not all the way to the edges – leaving almost an inch around on each side. There will be 4 pieces leftover for the tops of the poptarts. I add the tops so they match up evenly to the bottoms and cover the jam. I use a fork to seal the edges together around all sides – push hard enough so the edges seal together and you see the lines from the fork, but not too hard that the fork goes through the bottom half.
In a small bowl I whisk up one egg and a small splash of water to make an egg wash. I use a brush to brush the tops of each poptart.
Then I bake whichever puff pastry I decide to use!
While the poptarts are baking I make the icing! I just use confectioner sugar and water. I use about 2 cups of confectioner sugar and then add water slowly until I get the right consistency. Then I add a drop of jam to get the color I want for the icing – you can add as much or as little as you want to get the color you like. You could also use regular food coloring depending on the color you want!
Once the poptarts are done baking and cool off I drizzle the icing over the top of the poptart and enjoy!
Ingredients
2 cups fruit – fresh or frozen
1/2 cup sugar
1 sheet puff pastry
1 egg
2 cups confectioner sugar
1 cup water
Directions
- Add 2 cups of berries and 1/2 cup of sugar to a small pot. Add about 1/2 cup of water. Turn on medium-high heat and bring to a boil.
- Let mixture simmer on medium-low heat for about 15-20 minutes until jam thickens and coats the back of a spoon.
- Transfer to a bowl and let cool.
- Roll out puff pastry and cut into 8 equal pieces.
- Add jam to the center of 4 pieces – not all the way to the edges.
- Use the remaining 4 pieces to top the pieces covered with jam.
- Use a fork to seal the edges all the way around.
- Make an egg wash by whisking an egg and a splash of water. Brush over the top of each poptart.
- Bake according to the directions for whichever puff pastry you use.
- Make the icing by mixing confectioner sugar and water – add water slowly until you get the consistency you want for the icing. You may not use that much water.
- Add a drop of jam or food coloring to color the icing.
- Let the poptarts cool and then drizzle with icing.
- Enjoy!
