Homemade Potato Salad Recipe

This potato salad recipe is one of my favorites.  Each time I make it I am amazed at how good it tastes!  It is also a very quick and simple recipe which makes it even better!

You should start by making the potatoes, which I recommend boiling and then refrigerating overnight for best results. The potatoes should always be refrigerated with the skin on!

After potatoes are boiled and refrigerated, peel and cut into small pieces. Then prepare the dressing (which only takes minutes!) and then you are ready to combine the two!  

The most important step!

When combining the dressing and the potatoes you DO NOT want to try and add all of the dressing to a big bowl of potatoes – it is too difficult to coat the potatoes this way and they will get smashed in the process.  

Add a small amount of potatoes to a bigger bowl with a small amount of dressing and mix together.  Then keep adding a small amount of each little by little and mix together as you go.

Finally, refrigerate before serving – the colder the better!

This potato salad recipe is the perfect summer side dish and I promise everyone will love it!  

Ingredients:

  • 3 large potatoes
  • 1 cup Hellmann’s mayonnaise
  • 1/2 cup sour cream
  • 1 small onion
  • 1 tbsp pickle juice (I use Vlasic Kosher Dill)
  • salt, to taste
  • pepper, to taste

Directions:

  1. Boil potatoes until cooked through.
  2. Refrigerate potatoes at least a few hours until completely cold – refrigerate overnight if possible!
  3. Cut potatoes into small squares.
  4. Chop onion into tiny pieces using mini chopper.
  5. Combine mayonnaise, sour cream, onion, pickle juice, salt and pepper in a large bowl.
  6. In a separate bowl add a small amount of the potatoes and small amount of the dressing and mix together. Keep adding potatoes and dressing in small amounts, so potatoes don’t get mashed.
  7. Refrigerate and serve cold!
