Chicken Cacciatore

I have been making this meal forever – it always turns out delicious and it is one of the easiest things I make.   I basically throw everything in the pot and one hour later boom it’s done! This is also one of my favorite thing to eat as a leftover (it might even be better the second day!)  It makes a large quantity at once and we eat it all week!

Once the sauce is started – which consists of the tomato juice and paste – you throw in the sliced peppers and onions along with the chicken.  As everything cooks in the sauce over the hour it becomes very tender and the sauce gives it a ton of flavor.

I love eating this with brown rice, but you can definitely leave that out for a healthier option – I like it both ways!

Ingredients:

  • 1 46 oz can Sacramento tomato juice (or Campbell’s)
  • 1 12 oz can Hunt’s tomato paste
  • 2-3 boneless chicken breasts
  • 3 peppers
  • 1 onion
  • Garlic powder
  • Salt
  • Pepper
  • Canola oil
  • Brown rice

Directions:

  1. In a large pot add a small amount of canola oil to the pot and heat for about a minute.  Then add tomato juice and tomato paste. Stir to break up paste.
  2. Slice peppers and onions.
  3. Cut chicken breasts in halves or thirds, depending on size.
  4. Add peppers, onions and chicken to the pot and make sure they are submerged in the sauce.
  5. Add garlic powder, salt and pepper.
  6. Cook over medium heat for about one hour.

 

Serve over brown rice!
