Chicken Taquitos
Since I made these Taquitos I cannot stop thinking about them!!! I only used a few ingredients, but they were delicious and I will absolutely be making these again. These are perfect for a snack or an app for game day. The below ingredients only made about 6, so if I make these for a bigger group I will double the recipe to make more!
I decided to make these last minute, so I used a rotisserie chicken so I could make them quicker. I used a fork to shred the chicken into small pieces – I didn’t use the skin. I was left with about 1 cup of chicken. I added the chicken to a small pan with taco seasoning and water. The chicken cooked for a few minutes until the mixture thickened. I then added shredded cheese – I used about a ½ cup – the cheese melted very quickly!!
Once I had my cheesy chicken mixture I was ready to add to the tortillas! I lined one edge of the tortillas with a line of chicken (not too much!) and rolled into a tube-like shape. With the seam side down I added to the frying pan with oil just covering the bottom of the pan (heat oil prior to adding taquito.) Cook for a minute, or until tortilla is slightly hardened and safe to flip. Cook for 1-2 minutes on the other side.
I made these last minute with what I had in the house and they were soooo tasty – you can also definitely add some things to this recipe such as peppers or onions to spice things up!
Ingredients:
- 1 cup shredded chicken
- ½ cup water
- 1 tsp taco seasoning
- Shredded cheese
- Corn tortillas
Directions:
- Shred rotisserie chicken into small pieces.
- Add chicken to pan with water and taco seasoning until thickened.
- Add shredded cheese to chicken until melted.
- Line chicken over the edge of a tortilla and roll into a tube.
- Add rolled tortilla into frying pan with heated oil with the seam side down.
- Cook 1-2 minutes on each side.
