Game Day Potato Skins

The start of football season means game day foods!  I spent this past football Sunday trying some new game day apps I haven’t tried before.  The first was buffalo hummus (which came out great!) You can get the recipe here.  The other was potato skins – they came out soooo good!!  I didn’t try anything crazy with these just a basic potato skin, but they were delicious!

I used red potatoes because it is what I had in the house, but I think next time I will definitely use russet potatoes with a thicker skin. The red potatoes still tasted amazing, I just found it a little difficult to scoop the potato out without peeling the skin back.  Once the potato was scooped out I was able to fill the potatoes with the cheese and bacon! They were so cheesy!!!

Ingredients:

  • Potatoes
  • 1 8 oz bag Sargento Shredded Cheddar Jack Cheese
  • 4 slices bacon
  • ½ cup chopped green onion

*I liked using the shredded cheese because it melted quickly!

Directions

  1. Cook potatoes in the oven at 350 degrees for about 50 minutes to an hour – or until potato is fully cooked and easy to scoop out.
  2. Remove potatoes from the oven and cut in half.  
  3. Scoop out inside of potatoes – leave a small amount of potato, but not too much – you don’t want the skin to be too thick when you bite into it,
  4. Turn potatoes face down and butter the skins.
  5. Put skins back in the oven for a few minutes until they start to crisp up.
  6. You can cook the bacon in the microwave at this time until crispy and then smash into small pieces.
  7. Remove the potatoes from the oven and fill with cheese (yum!!) and then top with bacon.
  8. Back in the over until the cheese is melted!
  9. Remove from oven and top with green onion.

 

This was the perfect snack while watching the game!  They did take a little longer than some of my other recipes, but they were definitely worth it and I will surely be making these again!
