Classic Macaroni Salad

This macaroni salad is another easy cold salad that is perfect for a summer BBQ or for a big crowd! I love when I can make a large amount of something so easily.

I would say this macaroni salad is on the lighter side and not overly dressed in mayo – that is just how we like it! I also don’t like big chunks of vegetables in my recipes, which you will see on my other posts – I always chop vegetables into tiny pieces using a mini chopper.

If you are looking for something quick and easy to make for your next BBQ or summer dinner this recipe is perfect for you!

Ingredients:

  • 1 cup elbow macaroni
  • 2 celery stalks
  • 1 carrot
  • 1 small onion
  • 1/2 cup Hellmann’s mayonnaise
  • a little less than 1/4 sour cream
  • salt, to taste
  • pepper, to taste

Directions:

  1. Cook elbow macaroni
  2. Chop celery, onion and carrot into tiny pieces using mini chopper.
  3. Add macaroni, vegetables, mayo, sour cream, salt and pepper to a large bowl and mix!
  4. Refrigerate before serving!

This is definitely better cold – do not serve right away! This recipe make a large bowl of macaroni salad, definitely enough for a few people, but if bringing to a party I would definitely double it!
