Classic Macaroni Salad

This macaroni salad is another easy cold salad that is perfect for a summer BBQ or for a big crowd! I love when I can make a large amount of something so easily.
I would say this macaroni salad is on the lighter side and not overly dressed in mayo – that is just how we like it! I also don’t like big chunks of vegetables in my recipes, which you will see on my other posts – I always chop vegetables into tiny pieces using a mini chopper.

Ingredients:
- 1 cup elbow macaroni
- 2 celery stalks
- 1 carrot
- 1 small onion
- 1/2 cup Hellmann’s mayonnaise
- a little less than 1/4 sour cream
- salt, to taste
- pepper, to taste
Directions:
- Cook elbow macaroni
- Chop celery, onion and carrot into tiny pieces using mini chopper.
- Add macaroni, vegetables, mayo, sour cream, salt and pepper to a large bowl and mix!
- Refrigerate before serving!
This is definitely better cold – do not serve right away! This recipe make a large bowl of macaroni salad, definitely enough for a few people, but if bringing to a party I would definitely double it!
