Egg Salad Recipe
Egg salad on a salt bagel is one of my favorite things to have for lunch, but finding a good salad is not as easy as it sounds! That’s why I like to make my own – especially since it’s so good every time. This is such a simple recipe, but so delicious! My favorite thing about this recipe is that it comes together quickly and you can make as little or as much as you want!
The best part about this recipe is that it includes fool-proof directions for making the perfect hard boiled eggs – they come out perfect every time!
Add eggs to a pot – however many you want – and add cold water until eggs are covered. Bring water to a boil and once boiling let the water boil for about a minute.
After a minute, cover the pot and turn off the heat. Let the eggs sit covered for 15 minutes and prepare an ice bath for the eggs while you’re waiting. After 15 minutes remove eggs from the hot water and transfer to the ice bath for about 15 minutes.
After 15 minutes peel eggs and add to a bowl. Use a fork to smash eggs until the whites and the yolks are smashed into little pieces.
Add mayo, salt and pepper and mix. Add to toast or a bagel and enjoy!
Ingredients
4 Eggs
3 tbsp Hellmann’s Mayonnaise
Salt to taste
Pepper to taste
Directions
- Add eggs to a pot and cover with cold water.
- Bring to a boil and let boil for 1 minute.
- Cover and turn off heat. Let sit for 15 minutes.
- Prepare ice bath for the eggs.
- After 15 minutes remove eggs from hot water and transfer to ice bath.
- Let eggs sit in ice bath for 15 minutes.
- Remove and peel.
- Add peeled eggs to a bowl and smash with fork until whites and yolks are in tiny pieces.
- Add mayo, salt, pepper and mix.
- Let sit in the fridge for 15 minutes.
- Enjoy!
