Chicken & Veggie Stir Fry

Before throwing this dish together I had never tried to make any stir fry or lo mein dish with noodles – this was the first time and I am really happy with how it came out!  I will definitely make this again soon – it was perfect for a light dinner so tasty!

 

Ingredients:

 

  • 2 crowns of broccoli
  • ¼ large onion – I didn’t know how much onion I would want when I started
  • 1 green pepper
  • 4 thin cut chicken breasts
  • ⅓ cup soy sauce
  • ¼ cup teriyaki sauce
  • Drizzle of stir fry sauce
  • Minced garlic
  • Canola oil
  • 1 “No Yolks” Stir Fry Noodles – I used half the bag

 

I started by boiling water for the stir fry noodles – I never made these before, so I didn’t know how long they would take.  They probably cooked for about ten minutes before they went into the pan.

 

While the water was boiling I chopping up all of my ingredients – chicken, broccoli, pepper, onion.  I started by cooking the chicken in a separate, smaller pan in a little bit of garlic and oil until it was cooked through.  In a larger pan I added some oil and minced garlic (you can forget the garlic I just like to use garlic in everything!) Then I added the broccoli, pepper and onion – I like my broccoli more tender, so I steam it in the microwave before adding to the pan.  

 

Once the veggies were cooking I started to add the sauce.  Before I started to make this I looked up a few recipes for stir fry and lo mein to see what kind of combos were used – then I just decided to wing it and use what I thought would work!

 

I added the soy sauce, teriyaki sauce and stir fry sauce to the pan with the veggies and the amount I used was perfect!!  When I make this again I will definitely use the same amounts of sauce. In the past I have tried stir fry and I always use salt – this time I left it out and I’m happy I did – the sauces are salty enough and don’t need any extra!

 

The noodles and chicken were done cooking while the veggies were cooking, but I waited to add them to the pan so they didn’t over-cook. A few minutes before the veggies were done I added the chicken and the stir fry noodles for a few more minutes.

 

This recipe came out so good – it has the perfect amount of flavor and all the ingredients were perfect together.  Next time I would definitely add shredded carrots – I think that would be a good addition to the recipe. Also, my boyfriend won’t eat any dinner without meat, but if I was alone I would absolutely try make this without chicken – veggie stir fry!!
